Coconut Pie
2 eggs
1 1/2 cups sugar
2/3 cup evaporated milk
1 tablespoon vanilla
1/2 stick butter, melted
7 oz. pkg coconut
Cream eggs and sugar together. Mix melted butter with eggs and sugar.
Add milk and vanilla; mix well. Fold in coconut. Pour into a deep-dish unbaked pie shell.
Bake at 350 degrees 40-45 minutes, until golden brown.
