Angel Biscuits

2 1/2 cups flour 1/2 cup shortening
1 tsp. baking powder 1/4 cup warm water
1 tsp. salt 1 pkg. dry yeast
1/4 cup sugar 1 cup buttermilk, or regular milk with a
tbs. lemon or lime juice

Dissolve yeast in 1/4 cup warm water and set aside. Mix the dry ingredients in the order given. Cut in the shortening as you normally do for biscuits or pie dough. Stir in the buttermilk, also the water with the yeast in it. Blend thoroughly and the dough is ready to refrigerate in large, covered bowl or go ahead and make into biscuits.

When you're ready to work the dough, turn it out onto a floured board (I use a sheet of waxed paper with sprinkled flour) and knead lightly as for regular biscuits. Roll out and cut with a biscuit cutter or just pinch off some and roll into a ball and flatten with your palm - place on greased pan. Let biscuits rise slightly, about 10 - 15 minutes. (If dough is cold it will take a little longer for them to rise). Pop into 400' oven and bake about 12 minutes until browned.

Makes around 20 good sized biscuits. Enoy!!
